I posted the recipe for cream of veggie soup a while back.
Basically boil the 4-5 cups of veggies in water and bouillon or broth until soft. Toss it all in the blender. Add a cup of milk, return to pan and heat through. Serve and enjoy. Top with croutons, bacon bits or sausage if desired.
New variations:
- Roast 2-3 bell peppers, other type of chili if spicy flavor is desired, garlic cloves, and onions. To roast, place all on cookie sheet 6" under the broiler. Cook until skin bubbles and blackens a bit, 5-10 minutes. Remove from broiler and cover for a few minutes. Covering them steams the skin off. Peel the peppers and throw in a tomato based veggie soup with Italian seasonings. Blend and serve. This is great with pizza or calzones. :)
- Use sweet potatoes, add a dash of maple syrup, a spoon of brown sugar- Yummy fall in a bowl! Great with sweet maple sausage on top!
- For a Indian flare add a peeled chopped apple, potatoes, carrots, curry, a splash of lemon juice and a dash of tomato paste. YUM! Great with pita sandwiches! (that's what we're having for dinner--- I forgot I was cooking the pitas while I was typing this so- one of them is charbroiled!! I guess I really only needed one!!)
