When will I learn? I roasted chillies today and then skinned them with my bare hands...20 minutes later- my hands are burning. I did this last year too! Foolish.
Last year I accidently scratched my eye and the chili oil under my nail got into my eye!!! I thought my eye would explode!! I'm learning I guess, because I didn't do THAT this year! :)
We will be having some yummy chili relleno casserole this winter though and that makes every bit of burn worth it!! Yum
We had a GREAT lo cal dinner tonight. It was healthy and sooo good. I thought I'd pass it on to you.
Mediterranean Chicken and Veggies
2 pounds chicken
2 T oil
1 medium onion sliced or chopped
2 cloves garlic minced
1 14 oz can stewed tomatoes undrained
1 small eggplant cut into 1 inch chunks (I didn't have this)
1 med zucchini cut into 1 inch chunks (I used more)
1 med bell pepper
1 t oregano
1/2 t salt
1/4 t pepper
Also called for 2 oz can of sliced olives I didn't have that. (My motto- if you don't have half of the ingredients- make it anyways! :) )
Skin chicken and cook over hot oil for 10 minutes or until lightly browned. Remove chicken. Fry onion and bell pepper. Add in all the other ingredients and return chicken to pot. Bring to boiling. Reduce heat and simmer for 35-40 min until chicken is done.
I had cooked shredded chicken so I just started with the onions and bells in oil. Then I tossed in the chicken with all the other ingredients and cooked for 15-20 min.

It says to serve over couscouse or orzo pasta if desired so that doesn't count in the calories. I served over fresh rosemary pasta. Yum
